Carrot Lady

A playful twist on the White Lady, highlighting the affinity between LE Tribute Gin, citruses and carrot. Inspired by the carrot-based sweet treats of the Baltic.
Fresh, slightly sour. A more-ish crowd pleaser.


Ingredients

  • 40 ml LE TRIBUTE Gin
  • 30 ml carrot cordial*
  • 30 ml fresh lime juice
  • 1/4 barspoon Yellow Aji paste
  • 10 ml simple syrup
  • 10 ml fresh Egg white or pasteurised egg white
  • Garnish: ‘Crunchy’ carrot**

 

Preparation

  1. Add all the ingredients to a shaker filled with ice.
  2. Shake vigorously.
  3. Strain and serve straight up in a cocktail glass.
  4. Garnish with crunchy carrot.
  5. Enjoy!

    *Carrot cordial:
    · 1 kg carrots
    · 1 kg white sugar
    · 200 ml carrot juice

    1. The carrot is diced into 1 cm pieces and mixed with sugar in a glass container.
    2. Leave the mixture to stand for 48 hours at room temperature. Strain the liquid and mixed with 200 ml carrot juice.


    **“Crunchy” carrot:
    1. Cut a carrot into long, thin strips.
    2. Make a simple syrup by mixing 200g of water with 200g of white sugar, bring to boil and add the carrot strips. Cook for 2 minutes.
    3. Remove the carrot strips and spread them on a baking tray lined with baking paper.
    4. Sprinkle with chilli powder and bake at a low temperature (70ºC) until completely dry.
